Sfakiani Pita

It is a thin flatbread made from dough and filled with soft sheep or goat cheese. The pita is fried in a pan and then served with honey. The unique combination of sweet and savory makes this dish unusual and delicious.

Preparation of the Dough

Sfakiani pita starts with a simple dough made from flour, water, a pinch of salt, and a bit of olive oil. The ingredients are kneaded together until a smooth and elastic dough forms. After resting for about 30 minutes, the dough is divided into small portions and rolled out into thin circles, roughly the size of a small plate.


Adding the Cheese FillingThe filling is made from soft, fresh goat or sheep cheese, such as mizithra. A small amount of cheese is placed in the center of each dough circle. The edges are carefully folded over the cheese, sealing it inside. The dough is then gently rolled out again to form a thin, even flatbread, ensuring the cheese stays inside without tearing the dough.


Cooking and ServingThe prepared pita is cooked in a hot, dry frying pan until golden brown on both sides. The process takes just a few minutes, with the cheese inside melting and infusing the bread with its rich flavor. Once cooked, the pita is traditionally served warm, drizzled with Cretan honey. The contrast between the salty cheese and the sweet honey creates a perfect balance, making it a beloved dish in Sfakia and beyond.
